Egg Curry with Potatoes and Peas


Today for dinner I decided to have the store brought parathas along with pickle, curd /yogurt and then relax. But after a while I wanted to have a simple curry along with the parathas, then more I thought about it , the more I wanted to make something that would taste great with the parathas. Finally settled with egg curry cooked along with potatoes and peas from Foodiesbar. I have never boiled eggs in a pressure cooker so just cooked them in water on a stove top. You have a peek on this post if you want to make the perfectly boiled eggs. Two more alterations I made to the dish are the following.
1.) Instead of 3 tsp of tomato puree used 1 tbsp of puree and a freshly chopped tomato instead.
2.) Regular potatoes were replaced by baby potatoes, since I thought it would be easier to absorb the masala. Infact cooking the potatoes in the masala, make holes gently with a fork.
Cook the dish on low flame until done and garnish it with coriander leaves. Enjoy the egg curry with rice or roti.

Egg curry with Coconut / Egg Kurma / Egg Rassa

Egg kurma and chappathi are a favorite combination for a lot especially the ones from southern India. Gravies usually occupy the place of stir fry vegetables as a combination for rotis in South Indian meals. Many vegetarians still love egg and adding egg to the recipe makes a dish special, though the preparation would be simple. If you do not eat egg, it can be replaced with vegetables and usually potato and cauliflower is an excellent combination. Half a tomato can be chopped into small pieces and added along with the eggs. The boiled chunk of tomatoes along with the eggs and curry is a perfect combination. Enjoy egg kurma with rice or roti.

Egg Mushroom rice

A very quick recipe made when there is not enough of time to cut all the vegetables for the fried rice. This is simple to make and tastes great. If needed can add capsicums and spring onions to the fried rice. Usually yellow onions taste great for fried rice, since it is not as strong as the red onions. The lime juice is added helps in reducing the strong flavor of egg. Serve egg mushroom fried rice with tomato or chilli sauce.

Prawn stuffed eggs

This is another variation of the stuffed eggs; the stuffing is made with prawns and egg yolk. Prawns can be substituted with vegetables, chicken or any meat of your choice. The baking of the stuffed egg finally gives a distinctive taste to the dish. This is an excellent appetizer, serve it with soup and salad.

Curried stuffed eggs

This recipe has a simple stuffing which can be made easily in minutes. The mayo added makes the stuffing moist and binds the ingredients together. But be wild in making your own stuffing, infact the stuffing can vary from prawns, chicken, crab or a vegetable stuffing. Saute some onions , tomatoes and garlic with your choice of spice and salt. Egg frittata


Egg frittata, makes an excellent fulfilling breakfast or an easy delicious when lazy to do full-fledged cooking. You want modify a little in the frittata to make your own version of it. Few things you can add are sliced cucumbers, sliced tomatoes, sun dried tomatoes, soaked garbanzo beans ( sounds a bit different , but tastes surprisingly good) , capsicums. Any grilled vegetables can be added, like eggplants, potatoes, grilled paneer or anything of your choice.

Egg Masala (With onion and tomato paste, yogurt)


There are many versions of Indian style egg curry. This egg curry is made by grinding onion and tomato separately as a paste for the gravy in which egg is cooked. If a crispy version is needed, the egg can be roasted in a bit of oil and rubbed with pepper, before immersing the eggs in the gravy. Tastes great with chappathi / steamed rice.
