Kerala chicken roast ( Kozhierchi varathada)

Though a great tasting chicken, it has it’s dose of fat from the coconut and the coconut oil added to the recipe. As mentioned extra virgin oil an be a good substitute or even butter and ordinary vegetable oil tastes good enough. If not with whole chicken, try it with chicken wings, thighs or drumsticks and have to accept the coconut oil is the one which gives the authentic kerala taste.
